Thyme pairs wonderfully with meat dishes, sausages, poultry, soups and stocks. Add whole sprigs of thyme to casseroles for extra flavour or sprinkle thyme leaves and sea salt over potatoes then roast. Thyme also pairs well with olive oil, tomatoes, garlic and onions. It releases its strong, pungent flavor very slowly – so it’s best added at the same time as the other ingredients.
