Perfect Roast Potatoes

Crispy, golden spuds are a perfect accompaniment to the Christmas Turkey. Duck fat is the secret ingredient here. Enjoy!

Ingredients

1kg washed potatoes, peeled and cut into quarters

3 Tablespoons Duck Fat, Melted

5 Sprigs of Poppin Pods Rosemary

Sea Salt

Method

Preheat the oven to 200 degrees. Bring a pot of salted water to boil, then drop the potatoes in carefully. Par boil the spuds for approx. 5 minutes – or until just tender. Drain the water, then place the potatoes into a roasting pan with duck fat, a generous serving of sea salt and the rosemary. Shake the pan to coat and put it in the oven to roast for approx. 30 mins or until golden and crispy – checking on them after 15 minutes and turning to ensure they crisp up on all sides.

Serve as a side for the Christmas Turkey, with roast meats or grilled fish.
