Fresh chopped mint is fantastic in Vietnamese spring rolls or sprinkled through salads. Blend it with lemon, Poppin Pods parsley, olive oil, salt and pepper for a delightful green goddess salad dressing. Add it to freshly squeezed pineapple juice – or combine it with peas, carrots, prawns or lamb.
