New Wave Avocado Dip
2 large ripe avocados
½ red onion, chopped
1 red chilli, seeded and chopped
1 x small tin of water chestnuts, drained and diced
6 semi-dried tomatoes, chopped
1 garlic clove, chopped
1tbsp freshly grated ginger
1tsp curry powder
Good handful of fresh coriander
Juice of 2 limes
Sea Salt and cracked black pepper
Flatbread, to serve
Cut the avocados in half, lengthways, removing the seed and scoop out the flesh into a bowl. Lightly mash the avocado with a fork.
Add the remaining ingredients and mix well.
Season with salt and pepper, to taste.
Serve at room temperature with the warm flatbread.
